Turkish cuisine has deep roots in the Ottoman Empire and is a fusion that spans Central Asian, Middle Eastern and Eastern European cuisine.
This week we are digging into the history books and applying a modern twist to an ancient cuisine. Our starter is Fresh Dill and Mint Kofta with set Fava Bean Diamonds and steamed Samphire in EV Olive Oil and Lemon, on a rich Tomato and roast Pepper Sauce.
Now, 'kofta' is traditionally a meatball or dumpling. The word is derived from the Persian word 'kufta', which means 'to beat' or 'to grind'. So we have taken this concept and created our own plant-based 'kofta' and combined it with fresh dill to provide a beautiful lift.
