Here is an awesome mushroom burger that would beat the pants off Micky D’s
any day of the week. In the video I have baked them off in the oven but you
can do them on a grill as well just allow the mushrooms to marinate longer in
the balsamic and the oil mixture. The bun I have used for this recipe can be
found under breads, called vegan foccacia
1. Remove the stalk of the Portobello mushrooms
2. oil a baking tray
3. mix the balsamic vinegar and the olive oil together and pour into the cavity
of the mushroom
4. Drop in so chopped carlic and so rosemary sprigs
5. Place in the oven for 10 to 15 minutes and cook them off
6. While the mushrooms are cooking slice the cucumber and toss with some salt
to pickle them
7. allow them to sit at the side while the mushrooms cook
8. pour off the excess liquid and sprinkle with some vinegar
9. pour off this liquid as well
10. take fresh bun and cut in half
11. put some lettuce on the bun and then some of the pickles
12. add some fresh sliced tomato
13. slice from fresh avocado and place on top of the tomatoes
14. place the mushrooms on top of the avocado
15. to the top part of the bun spread some mustard and then place the top on
the burger
16. enjoy
