Avocados make a wonderfully satisfying meal as them are high in monounsaturated
fats. They also contain plenty of vitamin B, E and K.
Prep time 10 minutes
Ingredients
1 clove of garlic
¼ teaspoon diced chilli
½ a red onion
½ a red capsicum
½ a yellow capsicum
1 ripe tomato
8-10 basil leaves
1 ripe avocado
a pinch of salt
a squeeze of lemon juice
pepper to season
Method
1. Finely mince the garlic and chilli.
2. Finely dice the red onion and the capsicums.
3. Deseed the tomato and chop into small cubes.
4. Chop the basil leaves finely.
5. Put all ingredients into a mixing bowl.
6. Remove the stone from the avocado. Dice and add to the mixing bowl.
7. Add the lemon juice, pepper and salt.
8. Mix together all ingredients and serve.
Serving Suggestion
Great as a dip or serve alongside a plate of warm quesadillas.
