Focaccia is a popular bread in Italy and is usually seasoned with olive oil
and herbs. The dough is similar in style and texture to pizza dough.
Prep time 4 hours
Cooking time 25 minutes
Ingredients
2 cups Strong Baking Flour
1/3 to ½ cups Luke warm water
1 packet Dried yeast
2 pinches of salt
2 sprigs of fresh rosemary
rock salt
4 tbs olive oil
Method
1. Dissolve the yeast in the luke water.
2. Add a pinch of salt to the flour and mix well.
3. Pour the yeast/water mix into the flour and mix well with a spoon on that
it roughly comes together.
4. Flour the work surface and hands, then knead the dough till it is nice and
smooth and firm.
5. Put the dough into a bowl, coat it with a little oil to stop it from drying
out or sticking. Cover the bowl with cling film. Leave to prove for 1 ½
to 2 hours.
6. Flour the board and the dough and knead again to knock it back. Put he dough
back into the oiled bowl and allow to prove again. It should double its size.
7. Lightly oil a baking tray, then sprinkle flour on it.
8. Shape the foccacia by hand or with a rolling pin.
9. Brush the top of the foccacia with olive oil. Dimple the surface with your
fingers. Tear us some fresh rosemary, sprinkle it and some rock salt on top.
Leave to rise for another 1 ½ . Cook at 170º for 25 minutes.
Serving Suggestion
Serve as an accompaniment to dinner but also delicious as a lunchtime snack.
