Chocolate Chip Muffins


Is there anything better then a chocolate chip muffin straight out of the oven when the chocolate chips are still melty? If there is I haven’t found it yet! Makes 6 large muffins

Prep time 5mins
Cooking time 15mins

Ingredients
1 cup of soymilk
½ cup of chopped dark chocolate
2 cups flour
1 ½ tsp baking powder
3 heaped tbsp of coco powder
2/3 cup sugar
3 tbsp of olive oil
chocolate chips.


Method

1. Heat the soymilk gently and then melt the chopped dark chocolate.
2. Sift the flour, baking powder and the coco powder into a bowl and mix until combined. Add the sugar and stir.
3. Add the vegetable oil and soymilk and gently fold them together. Mix them as little as possible until they are just combined.
4. Add your chocolate chips.
5. Spoon the mix into the muffin cases.
Cook for 25 minutes at 180º time may vary depending on the size of your muffins.

Serving Suggestion
Serve warm with a dollop of vegan cream if desired.
