These cookies start off with a really soft dough that you have to spoon out on to baking trays. But the results are really soft cookies that almost melt in the mouth. If you like a firmer cookie then leave it in the oven for a little longer.

Preparation time 15 minutes
Cooking time 15 minutes

Ingredients
250g vegan margarine
500g brown sugar
30mls oil
300g plain flour
70g self raising flour
2 tsp baking powder
70g coco powder
180g Brazil nuts
50g coconut
50g chocolate shavings


1. In a mixing bowl whisk the vegan margarine and the brown sugar until the mixture lightens up and the sugar starts to dissolve.
2. Add the oil to this mixture a little at a time and beat well between additions.
3. Sift both types of flour with the cocoa powder and the baking powder into the creamed mix.
4. Chop most of the Brazil nuts and save some to top off the biscuits.
5. Fold the flour and the nuts into the beaten mixture until just combined.
6. Place greaseproof paper onto a baking tray
7. Using two spoons place balls of the dough onto the greaseproof paper leaving a room for the cookies to spread.
8. Top of each cookie with some chocolate shavings and place a Brazil nut on each cookie.
9. Bake in the oven for 10 to 15 minutes at 180 C
10. Remove form the oven and allow to cool completely on the tray before trying to move them.
11. Store in an airtight container with layers of greaseproof paper between the cookies.
