75 gms Flax seed (linseed)
50 gms Sundried tomato
75 gms Sunflower seeds
75 gms Pumpkin seeds
50 mls Olive Oil
100 gms Tomato Puree
Pinch of Salt
Good crack of Pepper
250 gms Red cabbage
250 gms Carrot
Vegan Puff Pastry.
Soy cream for brushing
Method
1. Preheat the oven to 180*C.
2. Grate the Red cabbage and the Carrots
3. Put the Flax seed, Sun dried tomato, sunflower seeds, pumpkin seeds, Olive
oil, Tomato Puree, Salt and pepper into a food processor.
4. Process these ingredients until they are well combined and the mixture is
quite sticky.
5. In a large bowl place the seed mixture and the grated vegetable with some
salt and pepper and mix them all together until well combined.
6. Roll out the puff pastry into a long rectangle
7. Take some of the mixture and form it into a long sausage along the centre
of the puff pastry.
8. Smooth out the sausage so that the shape is nice and even.
9. Fold half of the puff pastry over the sausage mixture.
10. And continue to roll the pastry so that it encases all of the sausage.
11. using a knife cut the sausage roll out into desired lengths and place onto
a baking tray lined with grease proof paper.
12. Brush the tops and the sides of the sausage roll with the soy cream son
that it is full coated.
13. take a shape knife and gently score the tops of the sausage roll
14. Sprinkle the tops with some seeds
15. Place in the oven and bake until the pastry is golden brown and well puffed.
16. Serve immediately with some salad and some tomato sauce.
