Pumpkin and Celeriac Soup

Celeriac is a delicious but often under used vegetable. It has a delicate celery flavour and is great in soups and casseroles. Just don’t be put off by its ugly appearance.

Prep time 15mins
Cooking time 1 hour

Ingredients

3tbs olive oil
2 Red onions
1 celeriac
1 butternut pumpkin
2 cloves of Garlic
Oregano
Veggie Stock
Water

Method
1. Peel and chop onions
2. heat oil up in a pot
3. sweat the onions off until the start to soften
4. Using a knife peel the celeriac and dice then add the celeriac and continue to cook off
5. peel the pumpkin and dice then pumpkin and continue cooking.
6. Add the stock powder, and water to taste and some oregano and garlic.
7. simmer until the vegetables start to soften
8. Blend up so the soup is nice and smooth

Rocket pesto

Rocket
Sprouted sunflower seeds
Olive oil
Salt
Pepper
Lime Juice

Put all ingredients into a blender and puree until you have a nice smooth pesto

Top the soup with the pesto and enjoy.
